Cubed Steaks with Sour Cream Sauce

cubed_steak_sour_creamWith all the rain and the slightly cooler temperatures that rolled in today I thought I would cook something a little heavier. Walking through Wegmans today, I started getting excited about all the fall foods that are going to be coming our way. I wanted to cook cubed steaks since they are an inexpensive meat so I thought I would make a sour cream sauce for them, kind of like stroganoff. This would be great served with egg noodles and a salad. I will say, watch the amount of salt you add. If you are using salted butter really watch it so it doesn't end up too salty. (PS it doesn't photograph very well)

Slider Toppings

red_pepper_mangoI have been wanting to post these recipes since the 4th of July but I just haven't had the time. Talk about a crazy summer. So for the 4th of July this year we did burger, sausage and hot dog sliders. The two toppings below are Avocado cream and Red pepper mango. I found some small rolls that worked for all of the them, made some small burgers and then just cut the sausage and hot dogs in half. Then I had a toppings stations that included the two toppings below, my bruschetta recipe, homemade mayo (which ended up being fun to make, although my arm was tired) and then the usual ketchup, mustard, pickles and cheese. This is a great way to make your next cookout a little different and ensure everyone gets to eat what they like.

Pork Chops with BBQ Tomatoes

Pork chop and tomatoesI was very pleased with the way these turned out, although I am doing a little tweaking to the tomato recipe because it was a little too strong on the vinegar even for me. I called them BBQ tomatoes because you boil them in the ingredients that you would make a bbq sauce out of. It tasted really good with the pork, but as always feel free to tweak to your tastes. If it is too strong add more brown sugar to sweeten it up. I grilled the tomatoes, onion and garlic first in a foil packet for about 10 mins but I am leaving that step out because I don't think it was necessary. Feel free to to that if you want though.

Waldorf Chicken Salad

waldorf_chicken_saladWhen it is hot out I love eating as many different kinds of salads as possible. Something about a cool salad on a hot day is so satisfying. This includes one of my all time favorites, chicken salad. I particularly like the Waldorf Chicken Salad because of the fresh fruit in it. As usual there are a bunch of different things you can add to this salad and different ways to can dress it. This is a pretty basic way so have fun playing around with it.

Chicken and Cheese Enchiladas

ck_cheese_enchOne more Cinco de Mayo inspired dish, after this I will find new things to cook, I promise. I love this recipe. It is based on a Tyler Florance recipe that I changed to be more my liking. The tomatillo salsa is so good you can just eat it with a spoon. I just started getting the Sunday paper again so I have been light on the coupons. If I find relevant ones I will add them.
