Sweet and Spicy Skewers

If you want to try something a little different for this 4th of July I think skewers are a great way to go. Last 4th of July I made three different types of skewers and it was great because there was something for everyone. I did one chicken, on shrimp and one beef. I thought I would make it a little simpler and do 2 different types. The chicken one is on the sweeter side while the shrimp one is a combination of spicy and sweet. If someone is a vegetarian just take all the veggies and fruit and make up a couple of skewers for them.

The chicken ingredients will give you about 20 skewers depending on how you load up the sticks and the shrimp will give you about 12-20 skewers depending on what size shrimp you buy.

This is a great meat dish because it is great for the grill or broiler, and when it is on sale its fairly inexpensive to feed a family of 4.

The marinades  I create use a lot of the same ingredients; this is done to help you save money by buying fewer ingredients and allowing you to eliminate waste. This is always a great thing to keep in mind if you are planning a week full of meals at one time.

Sausage with Grilled Mango

The sweetness of the mango with the smoky flavor of the sausage is a wonderful pair. The type of sausage you use is really up to you but I would go with more of a smoky flavored one just for that reason and stay away from the sausage that feature spicy as their main flavor.

Risotto with Sauteed Vegetables

Many people I know have not even had risotto much less cooked it, but they are missing out. It is so simple to make and so delicious. It helps that it is also incredibly cheap to make. This is a great recipe for when there isn’t a lot on sale for the week because it is so cheap to start with.

You can really use whatever vegetables are on sale. The ones in this recipe are just suggestions. Some other great veggies are asparagus, broccoli, peas and mushrooms. You can also omit the cheese if you want. The risotto is going to be plenty creamy because of the nature of it, however if you want the flavor of the cheese, add it.

Grilled zucchini is a favorite of mine, especially since you can really use any marinade you want and get slightly different flavors. This recipe is more just a set of suggestions. You can grill whatever veggies are on sale that week and use whatever marinade you like or is on sale.

This is a great side dish at any time of year. When it isn’t grilling season I like to roast these veggies as well.

Cost: Depending on where you shop and what marinade you use it should cost $8 or less for this side dish.

Quick tip: If you want to use a veggie grill pan, they sell throwaway aluminum ones in the grocery store for cheap. It makes the process very easy.
