London Broil with Avocado Mango Salsa

I am a big fan of making my own marinades but sometimes there are ones that are just hard to compare to. For this recipe I am going to use a marinade, which makes it easier and requires less items to bought. It’s really a win win situation.  I hope you all enjoy it too.

Beef Stroganoff

A sauce based in sour cream, how could you not love stroganoff? I tend to use a little bit cheaper of a meat when I cook it to save money and then just let it cook a little longer to make it more tender. You can start with a little more tender of a meat and cut down on the cooking time if you are not worried as much about the cost.

Creamy Mashed Potatoes

mashed_potsI kept it very simple this week, but I also thought this was very appropriate with Thanksgiving right around the corner. I use to make these potatoes with a ton more fat but I have realized that I could eliminate ingredients without eliminating flavor. I took out the butter, cream and cut back on the sour cream and cream cheese. They are so delicious.

Twice Baked Sweet Potatoes

Everything that is on sale this week is geared towards Thanksgiving, so I thought I would provide one more side dish idea especially since that is the main cooking that is going to be done this week anyway.  I really like this recipe. I could eat this every day of the week, so I hope you enjoy it as well.  This recipe is for 4 potatoes
