Chicken and Asparagus Casserole

I don’t really make a lot of casseroles but the weather was a little colder this weekend so I was in the mood for some comfort food.  I tried to do it with some lighter flavors in the spirit of spring.

Corned Beef

plated corned beefCorned beef is one of my favorite things and yet I only seem to cook it around St. Patrick's Day. When it comes to cooking corned beef you can boil it or bake it. I like to do a combination of both, mainly because that is the way my grandmother has done it my whole life. I also think this is a great way to do it because you get the flavor in the water to boil vegetables in and you can create a sweet crust on the corned beef when baking it.

 

Bacon Wrapped Stuffed Chicken

This is a great dish to cook for guests. It is so filling, delicious, and inexpensive. You can really stuff the chicken breasts with whatever you want, but I like apples and blue cheese. I think they go great with the bacon and mustard sauce.

Stuffed Tomatoes

Sorry it's been a couple of weeks. I was at the Olympics which made it a little hard to cook. I recently went to a potluck and made these for it. They seemed to go over pretty well, so I thought I would make them this week's recipe.

Buffalo Turkey Meatballs

I know I have been going a little overboard with both ground turkey and wing sauce, but I really wanted to create something fun for the Super bowl next weekend and this seemed like a great idea. Besides the sweet potato chips dipping sauce I also created this week, I swear I will stay away from wing sauce for a while.
