Tortilla Wrapped Chicken

Since cinco de mayo is this week and avocados are in season I thought it would be a good idea to make a Mexican inspired dish. Plus I had all these ingredients at home already so that made it very easy. I really like how it turned out so I hope that you do too.

Balsamic Pork Chops

I know I have not posted in forever so I thought I was about time to do it. Pork is always a great alternative because it is inexpensive compared to other meats and there is usually some cut on sale. My problem is always over cooking it, so I was determined not to do it this time and I succeeded.

Chicken Soft Taco

chicken_soft_tacoI tend to make my tacos full of cheese and greasy ground beef, so this week I thought I would make a soft taco that is a little lighter and healthier.  This is another one of those recipes where you can add and remove whatever you like. I think black beans would be a great addition to this taco.

Dad’s Meat Sauce

I think a lot of people have their own spaghetti or meat sauce recipe that they have perfected over the years, but this is one you should definitely try. My dad use to make and serve this at his restaurant on pasta night and people couldn’t get enough. I know I couldn’t. The recipe he gave me was to make 3 gallons so I cut it down, hopefully to the correct proportions.

Broccoli Salad

broccoli_saladNow that it is picnic and cookout season I thought I would add a simple, somewhat healthy salad.  I am sure most of you have had a version of this type of salad. They are all pretty much the same and it is really easy to add and remove ingredients that you do not like.
