Cubed Steaks with Sour Cream Sauce

cubed_steak_sour_creamWith all the rain and the slightly cooler temperatures that rolled in today I thought I would cook something a little heavier. Walking through Wegmans today, I started getting excited about all the fall foods that are going to be coming our way. I wanted to cook cubed steaks since they are an inexpensive meat so I thought I would make a sour cream sauce for them, kind of like stroganoff. This would be great served with egg noodles and a salad. I will say, watch the amount of salt you add. If you are using salted butter really watch it so it doesn't end up too salty. (PS it doesn't photograph very well)

Quick tips: You can make this sauce and serve it with any kind of meat that you like. You can also of course use greek yogurt instead of sour cream as always.

4 Cubed Steaks
1/2 medium onion chopped
2 Tbsp unsalted butter
1 cup Beef Stock
1/2 Tbsp Corn Starch
4 oz sliced mushrooms
1 clove of Garlic minced
4 oz Sour Cream


Heat a skillet over medium-high heat. Melt the butter then add in the onions and season with salt and pepper. Let these cook down for about 2-3 mins. Season the cubed steaks with salt and pepper, then add the cubed steaks to the pan. You want to sear both sides of the steaks. Cook for about 3 mins on one side and the same on the other, then remove from the pan and set aside. While the steak is cooking whisk together the corn starch and beef stock. Once the steaks have been removed add in the stock mixture, garlic and mushrooms. Let simmer for about 5 mins. Then stir in the sour cream. Finally add the steaks back in and let simmer in the liquid for another couple of mins.

Serve with rice or noodle or your favorite veggies.
