Slider Toppings

red_pepper_mangoI have been wanting to post these recipes since the 4th of July but I just haven't had the time. Talk about a crazy summer. So for the 4th of July this year we did burger, sausage and hot dog sliders. The two toppings below are Avocado cream and Red pepper mango. I found some small rolls that worked for all of the them, made some small burgers and then just cut the sausage and hot dogs in half. Then I had a toppings stations that included the two toppings below, my bruschetta recipe, homemade mayo (which ended up being fun to make, although my arm was tired) and then the usual ketchup, mustard, pickles and cheese. This is a great way to make your next cookout a little different and ensure everyone gets to eat what they like.

Quick tip: Per usual, if you want to make the avocado cream a little healthier you can use plain Greek yogurt instead of sour cream. You can also choose to use creme fresh if you want it to be a little sweeter.

Avocado Cream Ingredients

avacado_cream1 large avocado, pit removed
3/4 cup fat free sour cream
juice of 1/2 lime
1 tablespoon fresh cilantro

Slice up the avocado. Then preferably in a food processor (but you can use a blender) add all of the ingredients. Blend to a smooth consistency, but don't over blend because you don't want it to thin out too much. Taste. You can add more of anything until you get a flavor that you enjoy. It is better to start with a small amount of salt and pepper and then add as you see fit so it doesn't get over seasoned. It is this simple.

Red Pepper Mango Topping Ingredients

1 Red pepper
1 Mango
2.5 small Onion
¾ tsp Cumin
2 cloves Garlic minced
1 tbsp Brown Sugar
3 tsp Apple Cider Vinegar
Olive oil

Heat a medium sized skillet over medium high heat. Put about a Tbsp of olive oil in the bottom. Slice the onion into half moon shapes. Add to the hot pan and start to sweat out. Slice the red pepper into strips. Add the red pepper and the minced garlic into the pan with the onion, season with salt and pepper and cook until it all start to get soft. Cut the mango into small squares. Add the cumin, brown sugar, and vinegar into the pan. Stir and let combine. Let this cook down for about 5 to 10 mins. Add this mixture to a bowl with the mango and stir. You can serve this hot or cold. It is perfect for the sausage.
