Waldorf Chicken Salad

waldorf_chicken_saladWhen it is hot out I love eating as many different kinds of salads as possible. Something about a cool salad on a hot day is so satisfying. This includes one of my all time favorites, chicken salad. I particularly like the Waldorf Chicken Salad because of the fresh fruit in it. As usual there are a bunch of different things you can add to this salad and different ways to can dress it. This is a pretty basic way so have fun playing around with it.

Quick tips:
#1 If you don't feel like getting your kitchen hot by cooking the chicken or just don't have the time, buy one of those rotisserie chickens in the grocery store and shed pieces of that off for this recipe.

#2 Some of the other things people like to add to this salad include, blue cheese, onion, green pepper, poppy seeds, and pears.

Dietary classification: Gluten free


2-3 cups of cooked  Chicken chopped or shredded
1 medium Apple chopped (unpeeled) Sprinkle with lemon juice so doesn’t brown
1 cup Seedless Grapes
½ cup of Walnut pieces (you can toast them in a pan on the stove if you wish)
½ cup Celery sliced
¼ cup golden raisins
¾ cup Plain Greek Yogurt
¼ cup of Mayonnaise
¼ cup Orange Juice


You can cook the chicken either in the over or on the stove top. Let it cool and then chop or shred it. Mix the chicken in a bowl with the apples, grapes, walnuts, celery and raisins. In another bowl mix together the yogurt, mayonnaise, orange juice and season with salad and pepper. Add the dressing mix to the chicken mix, stir well and taste. Season with more salt and paper as needed. I like to eat this on top of a lettuce salad but you can of course serve it how every you like it best.
