Roasted Pork Loin with Strawberry Basil Vinaigrette and Asparagus

This is a great flavorful dish that is wonderful served with a simple starch like roasted potatoes or rice.

Ingredients

3 to 3 ½ lb Pork Loin
4 Tbls Dijon Mustard
4 Tbls Balsamic Vinegar
1 ½ cups Olive Oil
2 Garlic cloves minced
½ tsp dried Basil or 1 tsp fresh Basil
¼ tsp Sugar
½ pint Fresh Strawberries halved (additional strawberries for garnish if you want as well)
1 bundle Asparagus
1 Tbls Honey mustard
Salt
Pepper

Instructions

Preheat your oven to 375 degrees.

To make the rub/marinade, combined the Dijon mustard, 2 Tbls. balsamic vinegar, 2 Tbls olive oil and garlic in a Ziploc bag. Salt and pepper to taste.  Place pork loin inside bag and rub pork with mixture. Let pork marinade for at least 30 min. ensure that meat is back to room temperature before cooking. Heat a small about of olive oil in a sauté pan. Brown pork on all sides, and then place into a roasting pan and in the oven. The pork should cook for about an hour or until the meat thermometer reaches 140 degrees. When pork is done, pull it out of the oven and let rest for 5-10 min before slicing.

While pork is cooking make the strawberry, basil vinaigrette.  Place 1 cup of olive oil, strawberries, 2 Tbls. Balsamic Vinegar, basil, sugar, ½ tsp salt, ¼ tsp pepper in a food processor or blender. Blend until well combined.

In a shallow dish coat the trimmed up asparagus with 1 ½ tsp olive oil, 1 Tbls. Honey mustard, salt and pepper. You can grill the asparagus or place them in the oven. On a medium to medium- high grill they will take about 10 min. Make sure you flip them. In the oven at the 375 temperature they will take about 12- 15 min, or you can cook them while the pork is resting. If you choose this method raise the temperature of the oven to 425 after you remove the pork and place the asparagus in for about 5-10 mins. To cook the asparagus in the oven place on a cookie sheet in the middle of your oven. If you apply some pressure to the asparagus you should be able to tell if it’s tender. Once tender to the touch they are ready.

Place sliced pork on a platter and drizzle with vinaigrette. Garnish with additional strawberries if you would like.
