Beef Stroganoff

A sauce based in sour cream, how could you not love stroganoff? I tend to use a little bit cheaper of a meat when I cook it to save money and then just let it cook a little longer to make it more tender. You can start with a little more tender of a meat and cut down on the cooking time if you are not worried as much about the cost.

Quick tip: If you want to save calories and fat you can use a reduced fat sour cream or plain yogurt.

1lb Stew Meat or top loin steak cut into cubes or strips

Olive Oil

2 Tbsp Butter

1 ½ cup Beef Broth

2 Tbsp Ketchup

2 Garlic cloves minced

8 ounces sliced Mushrooms

1 medium Onion chopped

3 Tbsp flour

1 cup Sour Cream

Egg noodles




Drizzle olive oil in a skillet and heat up over medium high heat. Add onion and mushrooms, season with salt and pepper and sauté for about 5 mins. Remove onions and mushrooms from the pan.  Add in the butter. Once it is melted add beef and brown on all sides. Be sure to season the meat with salt and pepper.  Hold out 1/3 cup of broth and add the rest of it to the pan along with the ketchup and garlic. Bring to a boil then reduce heat to a simmer and cover for about 35 min if using a less tender meat and 15 min if using more tender meat.

Stir in the mushrooms and onions and let cook for another 5 min. Shake or whisk together the reserved broth and flour. Pour mixture into pan and stir as it comes to a boil for about a minute. Once thickened add in your sour cream and heat until hot all the way through. Serve over the noodles.
