Grilled Chicken Ranch Pasta Salad (with green beans, tomatoes, and balsamic onions)

This is great as a main meal or as side dish for a picnic or potluck.

Ingredients

2 large chicken breasts
½ lb pasta of your choice (I like the no yolk egg noodles because they are light)
1 cup chopped tomatoes (I like the sweetness of grape tomatoes, but you can use whatever is on sale)
1 cup Green beans chopped
1 Medium Onion Sliced
2 cloves Garlic minced
1 ½ Tbl. Dijon Mustard
1 Tbl. Balsamic Vinegar
¾ cup Ranch Dressing
½ Tbl Olive Oil
Salt
Pepper
Fresh Dill (optional)

Instructions

Preheat gill over medium high heat. Get pasta water going on the stove.

Coat the two Chicken breasts with ½ Tbl Dijon mustard and season with salt and pepper. Once grill is hot cook chicken breasts for about 20min. Cooking time will varying depending on the size of the breasts. Make sure they are cooked through before putting into the salad.

Cook pasta per package directions. When there is 4 mins left in the cooking time put green beans in the pasta to blanch them. Drain the pot once cooking is complete.

Heat the olive oil over medium heat. Place onions and garlic in the pan and saute for about 4 min, or until onions start to soften. Put balsamic viniger in the pan and turn the heat down to low. Let the onions and garlic cook in the vinegar for another 4 mins.

Let chicken cool for a minute after you pull it off the grill. Then chop it into small chunks.

Place all ingredients in the bowl including the remaining Dijon mustard and ranch dressing. Stir well. Salt and pepper to taste. Garnish with fresh dill if you would like. It adds a good flavor and is pretty all at the same time.

This is great served right away or put it in the refrigerator for a couple of hours to let the flavors absorb. If  you do put it in the fridge, you might want to add a little more dressing when you pull it out to moisten up the salad.
