Sweet and Sour Pork

Once again this is certainly not authentic, but it is delicious. Honestly, creating my own sweet and sour sauce is a big step for me. Usually for sweet and sour I buy a jarred sauce because there are a couple of good ones out there. So feel free to do that if you do not want to take the time to make this sauce.

Quick tips:
#1- Use whatever pork your store has on sale and just cut it into the necessary pieces.

#2- You can really add whatever vegetables that you want to this. I’m just a sucker form baby corns and water chestnuts.

2 lbs Pork cut into ¾ inch pieces
1 20 ounce can Pineapple Chunks
½ cup packed brown sugar
½ cup white vinegar
2 tsp Soy Sauce
2 Carrots cut into thin slices
1 clove Garlic finely chopped
2 Tbsp Corn Starch
2 Tbsp Cold Water
1 Pepper cut into matchstick slices
1 can Baby corn
1 can Water Chestnut slices

Rice to serve 4


Cover bottom of a frying pan with vegetable oil. Salt and pepper the pork pieces then sauté them in the pan for about 10 mins.

While pork is cooking drain pineapple and reserve juice in another bowl. To the juice add enough water to measure 1 cup. Pour the liquid in a sauce pan with the brown sugar, vinegar, salt, soy sauce, carrots and garlic. Bring to a boil then reduce heat. Cover and simmer about 6 minutes.

Mix together 2 Tbsp of cornstarch and 2 Tbsp of cold water, then stir the mixture into the sauce. Next add your pork, pepper, baby corn and water chestnut and cook for about 5 mins. Then add your pineapple and let cook for another 4 mins. Cook rice per the package instructions and serve with the sweet and sour pork.
