Southwestern Burger

Labor day is next weekend and may be one of the last opportunities to grill out so I wanted to come up with a fun grilling recipe.  This is definitely not your traditional burger, but it is one that will please the crowds. It would be great served with grilled corn, pasta salad, potato salad, or fries sprinkled with chili powder and cumin.

1lb Ground Beef
1 cup Salsa, slightly drained
½ cup crushed Tortilla Chips
1 Avocado
16 pieces of Pepperjack cheese (or cheese of choice)
½ cup Sour Cream
Favorite hot sauce
2 tsp. Chili Powder (optional)
4 large Tortillas

Preheat grill over medium high heat.

In a bowl mix together ground beef, drained salsa, tortilla chips and season with salt and pepper. Mix together well. The tortilla chips help to absorb some of the moisture from the salsa , but can be left out if you don’t want to use them.  Divide meat into four even sections and  create patties. Cook on the grill for about 5-7 min a side depending on thickness of burger and desired doneness.

In another bowl mix together sour cream, hot sauce and chili powder.  The amount of hot sauce you should add should be based on how spicy you want it to be.  Slice the avocado.

When burgers are just about done, place the tortillas on the grill for less then a min on each side to heat them up. Put the burgers on a plate and let them rest a min. Then cut each one in half. Place two halves in the center on the tortilla and top with avocado, cheese and sour cream sauce, then wrap them up like a burrito.
