Grilled Corn

The recipe is quick and simple this week because I am off doing my first Triathlon this weekend. Use this grilled corn as the perfect side dish to some of the past recipes that have ingredients on sale this week like the London broil, Sausage with grilled mango, or Mediterranean turkey burgers.


We have entered the season for fresh local corn in many parts of the country and its only a few weeks away for the rest of the country so this is a great time to get corn cheap. Cooking corn on the grill is my favorite way to eat it. There is just so much flavor cooked into it.

This recipe is set up to serve 4 people.

Corn can be found on sale everywhere right now, including your local farmers’ market and it is only going to continue to get cheaper and fresher over the next couple of weeks.

Cost: Between $3-4 depending how much you pay for you corn.

Quick tip: Some other spices that can be good on the corn are basil and oregano. You can also sprinkle Parmesan cheese on the corn for a little extra zip.

4-8 Ears of Corn
Olive Oil or Cooking Spray
Chili Powder


Remove all the silk from the corn. Soak the corn in water husks and all for 15 min. Pre-heat grill on a Medium-High heat.  Open the husks up but don’t pull them off and brush olive oil  on the corn or spray with cooking spray. Sprinkle the corn with chili powder. Put husk back over the corn and place on grill for 10-15, turning about every 5 min. If your flames are high on your gas grill turn the corn more frequently. Then pull the husks back and grill the corn for another 5 mins turning frequently. Remove from heat, spread butter and sprinkle salt on corn. You will really enjoy this!
