Sour Cream Pork Chops

with German Potato Salad

I feel like pork chops often get the reputation of being tough or flavorless, but these are quite the opposite and they are so simple to make. It is also a different way to prepare them then your normal pork chops and applesauce. I love creating delicious pork recipes since pork is more affordable than beef.

This recipe is for 4 people and is set for one chop per person but if you want to give people two chops, double it. The German potato salad will feed 6-8 people.

Ingredients for Pork Chops

4 Pork Chops bone in or out
¾ cup Sour Cream
1 tsp Onion Powder
1 tsp Garlic Powder
1 tsp Paprika
1 cup Bread Crumbs (get flavored if you want. I like the roasted garlic ones.)

Ingredients for German Potato Salad

3 lbs Potatoes cut into bite sized pieces
½ lb Bacon chopped
1 large Onion chopped
3 Tbsp Flour
½ cup Sugar
¾ cup Apple Cider Vinegar
¾ cup Water
1 ½ tsp Dijon Mustard
1 tsp Salt
½ tsp Pepper


Preheat oven to 350 degrees.

Mix together sour cream, onion powder, garlic powder and paprika. Pour breadcrumbs in a flat dish that the pork chops can fit in. Cover each pork chop in sour cream, making sure it isn’t on too thick, and then cover them in breadcrumbs.  Place coated pork chops in a greased baking dish. Bake pork chops for 40-50 min or until breadcrumbs are golden. The internal temperature should be around 160 degrees.

While pork chops are cooking boil potatoes. Once the water is boiling they will take between 10-20 mins to cook. They should be fork tender but not falling apart. Brown the bacon in a skillet. The best way to chop bacon is to cut it using kitchen shears. To brown the bacon place it in a cold pan then turn on the heat. Once bacon is cooked remove from pan and pour out half of the grease. Place onion in the pan and sauté until cooked. Then add flour, sugar, vinegar, water, mustard, salt and pepper. Bring to a boil and then simmer until the sauce has thickened. Mix the potatoes, bacon and sauce together in a bowl.
