Turkey, Avocado, and Goat Cheese Lasagna

 A few years ago I was experimenting with different food combinations so I mixed goat cheese and avocado. It instantly became one of my favorites. I try to find every way possible to use it.

Items on sale: Ground turkey and avocados

Cost: Around $15 depending on where you shop and what they have on sale this week.

Quick Tip: If you have a Trader Joe's around you, they always have the cheapest goat cheese. You can save at least $2 for a 5 oz. package.


1 lb. Ground turkey
8-12 Lasagna noodles (boil per package instructions)
1/2 Medium yellow onion chopped
2 Cloves of garlic minced
1 Tbl Olive Oil
1 Tbl Butter
2 Medium Avocados
3 oz Goat cheese
1 cup Milk (Whole milk ( 150 calories) will give more flavor but skim (86 caloreis)will save you calories and fat)
2 dashes Lemon Juice
Bread Crumbs (this is optional)
Salt and Pepper


Preheat oven to 350 degrees.

Heat skillet over medium high heat. Add olive oil and butter, then add onions and garlic. Sauté for 2 mins, then add ground turkey, salt and pepper and brown. Pull off heat when turkey is cooked through.

Cut avocados into small pieces and place in a medium bowl. Add chunks of goat cheese and the two dashes of lemon juice. This is just to help the avocado retain its color. I suggest blending together with a hand blender if you own one. Otherwise you can puree it or even just mash together. Thin with the milk by blending or mixing thoroughly.  Add more milk if you want to work with a thinner mixture. Salt and pepper to taste.

You can either bake the lasagna in individual ramekins if you have them or an 8x8 baking pan. If you are going to use the ramekins I suggest you cut the lasagna noodles into circles by placing the ramekin upside on the noodle and tracing the edge with a paring knife. Place a small amount of the avocado, goat cheese mixture in the bottom of the dish. Then place a layer of noodles. Next place a third of the ground turkey in the pan, top with some of the avocado mixture and top with noodles. Keep layering until you reach the top of you pan. Please the avocado mixture on top of the last layer of noodles and sprinkle bread crumbs on the top. If you don't want to use the bread crumbs don't. I like them for the little extra flavor and crunch they add. If you are using the ramekins bake them for about 20 mins, if you are using the 8x8 pan bake for about 30 min.
