Sweet and Spicy Skewers

If you want to try something a little different for this 4th of July I think skewers are a great way to go. Last 4th of July I made three different types of skewers and it was great because there was something for everyone. I did one chicken, on shrimp and one beef. I thought I would make it a little simpler and do 2 different types. The chicken one is on the sweeter side while the shrimp one is a combination of spicy and sweet. If someone is a vegetarian just take all the veggies and fruit and make up a couple of skewers for them.

The chicken ingredients will give you about 20 skewers depending on how you load up the sticks and the shrimp will give you about 12-20 skewers depending on what size shrimp you buy.

Quick tip: When fresh pineapple is one sale it will be the sweetest thing to use but if you want to save money canned pineapple is fine.

Quick tip: As I have mentioned in another article. If you want to safe some money on lemon and lime juice, feel free to use the juice that comes in the little lemon and lime bottles. They last longer and are a great deal.

Ingredients

2/3 cup Sweet and Sour or Hawaiian Marinade of Choice
2 large Chicken breast cut into bit sized pieces
1 lb Pineapple cut into chunks
2 Medium onions cut into sections
1 lb Medium or large shrimp
2 Tbsp Lemon juice
2 limes (optional)
1 ½ tsp chili powder
Favorite hot sauce
2 Mangoes cut into chunks
1-2 Red Peppers cut into chunks
Bamboo skewers
Salt
Pepper

Instructions

Cut chicken into fairly even bite-sized pieces. You want to make sure that all of them will cook evenly.  Place chicken in 1/3 cup of your sweet marinade for at least 30 min. At this time also place your onion in a 1/3 cup of your sweet marinade.

If your shrimp are frozen thaw them out in cold water and lemon juice. Drain them off once thawed and place in a bowl with chili powder and your hot sauce. You can add as much or as little as you want. Salt and pepper and mix to make sure everything is coated.

Cut up all your remaining fruits and vegetables and if you are using wood or bamboo skewers make sure you let them soak for at least a half hour to prevent them from burning on the grill.

Preheat your grill to a medium heat. Add some salt and pepper to your chicken and onions. You are now ready to start putting the food on the skewers. The first one should have chicken, pineapple and onion. It is up to you how much you put on a stick, but I generally do 3 pieces of meat and then one onion and one pineapple. The other skewer will have the shrimp, red pepper and mango. If you have left over of any one thing just make a couple of odd skewers or a couple of veggie skewers.

The chicken skewers should be cooked first for about 6 min on each side but they could take a little less time then that depending on how small you cut the chicken. So just keep you eye on them. Once the chicken is cooked lower the grill to about medium low and cook the shrimp about 3 mins on each side.

The skewers are now ready to serve. If you want you can squeeze a little lime juice of the shrimp skewer or at least place lime slices out for those that want to take them.
