Grilled London Broil

with roasted green beans and grape tomatoes

This is a great meat dish because it is great for the grill or broiler, and when it is on sale its fairly inexpensive to feed a family of 4.

The marinades  I create use a lot of the same ingredients; this is done to help you save money by buying fewer ingredients and allowing you to eliminate waste. This is always a great thing to keep in mind if you are planning a week full of meals at one time.

Ingredients

1 ½ - 2 lbs London Broil
5 Tbsp Steak Sauce
1 Tbsp Balsamic vinegar
1 Tbsp Olive Oil
1 ½ tsp Garlic Powder
1 ½ tsp Onion Powder
½ tsp Chili Powder
1 ½ lb Green Beans (ends trimmed)
½ pint Grape (cherry) Tomatoes
½ Onion roughly chopped
2 Garlic Cloves Chopped
3 Tbsp Grain or Dijon Mustard
1 Tbsp Olive Oil
Salt
Pepper

Instructions

Put steak sauce, balsamic vinegar, 1 Tbsp olive oil, garlic powder, onion powder and chili powder in a large ziplock bag. Place London Broil inside bag and coat with marinade. Place in fridge and let sit for at least 4 hours.

Preheat oven to 400 degrees and heat grill to medium-high heat.

Place tomatoes and green beans in a bowl with the onion, garlic, mustard, and 1 Tbsp of olive oil. Add a couple dashes of salt and pepper. Mix around to coat everything.

Place green bean mixture in a baking dish and roast for about 30 min. Stir about every 10 min. You may want to add a little more salt and pepper to the beans when you remove them from the oven.

Part way into the green beans cooking process place London broil on grill. Depending on the thickness it will take between 5 and 8 min a side for medium rare. If you want to check by temp, the thermometer should read between 125-130 degrees. Once meat is done take off grill and let sit for 5-10 min before slicing. Meat will continue to cook while it sits so don’t overcook meat on the grill.  Slice the meat into strips and serve alongside green beans.
