Sausage with Grilled Mango

The sweetness of the mango with the smoky flavor of the sausage is a wonderful pair. The type of sausage you use is really up to you but I would go with more of a smoky flavored one just for that reason and stay away from the sausage that feature spicy as their main flavor.

Quick tip: If mangoes are not on sale for you this week but another sweet fruit is like peaches, feel free to use those. Any sweet fruit will taste amazing grilled and will be great with the smoky sausage.


Sausage of your choice
2 Mangoes
1 Onion sliced
1 Red pepper sliced
Rolls (optional)
Ingredients for mustard sauce (optional, see below)

Mustard Sauce

This sauce is a great addition to the contrast of the sweet if you are a fan of mustard. If not top it with your favorite condiment.
1/3 cup Dijon Mustard
¼ cup Sour Cream
½ tsp Cumin
½ tsp Lemon Juice


Preheat grill.

To cut the mango but the two sides off of the center core. Then with a paring knife make slices done the mango and then across the mango without going through the skin. This will create small bite sized squares all still attached to the skin.

The onions and peppers can be cooked on the grill either in a foil packet (which will create more of a steamed effect) or directly on the grill with foil or a vegetable grilling tray so you don’t lose the vegetables to the grill. Which ever method you use make sure you season with salt and pepper.

The best way to cook the sausage is to place it over high heat for about 2 mins and then cook it over indirect heat for about 15-20 mins. During the indirect cooking time make sure you keep your eyes on it and turn it often. You do not want the skin to burst open on your sausage as this will cause the juices to leak out and dry out. The sausage is done when the internal temperature is160 degrees.

Place the mangoes on the grill fruit side down. These will only take about 10 mins. Pull them off when they are heated through. The peppers and onions will take about the same amount of time.

If you want to make the mustard sauce mix all the ingredients in a bowl and salt and pepper to taste.

Serve the sausage topped with the mangos, peppers and onions either in a roll or directly on a plate.
