This is a great potato salad that can be served both warm and cold depending on what kind of mood you are in. If you are going to serve it cold I recommend you waiting till all of the items have cooled before you combined them as oppose to sticking it in the fridge once they are combined.

Quick tip: If you prefer to use fresh blue cheese over the blue cheese dressing you can either add a little olive oil or mayonnaise to the mixture to keep up the moisture. I like using the blue cheese dressing because it is always less expensive and you can use the dressing for so many things. You can also use a lower fat blue cheese or one of the yogurt based blue cheese dressings to save on both fat and calories.

Ingredients

8 medium sized Red Potatoes cut into bite size pieces
1 medium Onion halved and sliced
2 cloves of Garlic minced
4 strips of Bacon chopped
2 Tbsp White Wine Vinegar
2 Tbsp Dijon Mustard
1/2 cup Blue Cheese Dressing
Salt
Pepper

Instructions

Place potatoes in a pot of cold water and bring to a boil. Cook potatoes until done, it will be about 8-10 mins after the water starts to boil. Drain and let cool if you are serving salad cold. If you are serving it hot place drained potatoes in mixing bowl.

While the potatoes are boiling fry chopped bacon. The best way to do this is place the bacon in a cold pan and then turn up the heat. This will help the bacon cook more evenly. Let bacon brown for about 5 mins then add in the sliced onion and saute for another 5 min. Add a pinch of salt and pepper to the pan. Throw garlic in the pan and let cook for another 3-4 min. Let mixture cool if servering salad cold, otherwise place mixture in mixing bowl.

Add remain ingredients to the mixing bowl. Salt and pepper to taste.

It is just that simple and it will taste wonderful. I always say, how can you go wrong with bacon and blue cheese.
