Potato Skin Bites

bite sized stuffed potatoesI originally made these for a Super Bowl part and they were a hit. They are kind of like bite sized potato skins, hence why I called them what I did. They are much each to take to a gathering though and they are easier for people to eat. You can really just use the concept and fill them with whatever you want. This is just what I did. The sausage I used was slightly spicy and slightly cheesy.

Cost: $8, this can serve a ton of people since it is an appetizer

Quick tip: Another great filling for this would be the traditional bacon or go for something healthier with broccoli

10 Red potatoes
2 links of your favorite sausage cut into tiny pieces
1/2 onion finely diced
1 clove of garlic minced
1 1/2 cups shredded cheese (I like cheddar)
1 Tbsp Dijon mustard
Sour Cream mixed with your favorite hot sauce for dipping (optional)


Boil your red potatoes in salted water for about 10 mins or until they are just tender. You do not want to over-cook or they will fall apart.

Heat a skillet over medium high heat. Place a small amount of oil and saute your onions for 3-5 mins, then add your garlic for 1 min and finally add your sausage. Season with salt and pepper.  Cook together until there is color on your sausage or at lease until it is heated through. Mix in your mustard and 1/3 of your cheese.

Drain the potatoes and let them cool slightly. Cut them into halves or quarters depending on how big they are. Scoop out a small amount of potato from the center of each one. Fill the hole in with the sausage mixture and place on a baking sheet. When done filling the potatoes top them all with remaining cheese. Please them in a 350 degree preheated oven and cook for about 15 mins or until the cheese is melted and there is some color on the potatoes.

Mix together your sour cream and hot sauce and put in a little dish for dipping.
