Bacon Breakfast Muffins

Spent some more time going through my grandmother's recipes and I found a great breakfast recipe.  In reality you could make this for any meal, but I like popping them in my mouth for breakfast. And really this is about as breakfast as I get.  They are easy to make and you could really substitute any ingredients you like in and out of it.  It's also great if you are growing tomatoes and Basil in your garden like I am.

Quick tips: #1 I substituted greek yogurt for the mayo to make it healthier.  You could use mayo though if you want.  If you want to make it healthier you can also use a lower fat cheese.

#2 If you want to make it more breakfast like add in an egg or two.

#3 It is generally cheaper to buy brick cheese and shred it yourself.

8 slices of Bacon
1 Tomato seeded and chopped
1/2 Onion, chopped
3 ounces shredded Cheddar Cheese (or your favorite)
1/2 c greek yogurt
1 1/2 tsp diced Fresh Basil or 1 tsp dried basil
1 16 ounce package of refrigerated biscuitt dough


Preheat oven to 375 degrees. Spray or lightly grease your muffin pan.

Cook up your bacon.  My favorite method is on a bacon plate in the microwave, but do whatever you want.  In a bowl mix together all of the ingredients except the biscut dough.  The bacon should be crumbled into the bowl.  If you want a thinner biscuit cut them biscuit in half lengthwise and place one in the bottom of each muffin tin.  If you want a little more dough just place one biscuit in each tin.  If you do the later don't fill as much or they will overflow while cooking.   Then fill each tin with the mixture just until it is hitting the top of the tin.  Bake for 10-15 min or until the biscuitt is golden brown.  Serve warm or reheat when you are ready to eat.  Yum Yum!
