Chicken Cacciatore

This is a classic Italian dish and people always make it differently. Most people will use chicken with the bone in but I find the boneless easier to eat. This is a pretty simple dish, that you can choose to customize how you want. It is perfect served over pasta with a little parm served on top. Makes great leftovers too, so make a big batch and eat it twice this week.

Potato Skin Bites

bite sized stuffed potatoesI originally made these for a Super Bowl part and they were a hit. They are kind of like bite sized potato skins, hence why I called them what I did. They are much each to take to a gathering though and they are easier for people to eat. You can really just use the concept and fill them with whatever you want. This is just what I did. The sausage I used was slightly spicy and slightly cheesy.


Roasted Garlic Dip

I love onion dip and then I found this variation with roasted garlic and bacon. So delicious and so easy. It is perfect for your Super Bowl get together this weekend or any time you have a party really. It is a great recipe to experiment with and try new things.


Bacon Breakfast Muffins

Spent some more time going through my grandmother's recipes and I found a great breakfast recipe.  In reality you could make this for any meal, but I like popping them in my mouth for breakfast. And really this is about as breakfast as I get.  They are easy to make and you could really substitute any ingredients you like in and out of it.  It's also great if you are growing tomatoes and Basil in your garden like I am.


Creamy Mustard Pasta

One of my favorite things to do when the weather starts to cool down is make creamy, filling meals. I also like to make meals in general that you can toss together and don't have to plan for. While I am calling this creamy mustard pasta, I could really call it toss together pasta. The idea behind it is to just take what you have around your house and toss it with pasta. Its a great chance to experiment and have fun.
