Slow Cooker Chicken Chili with Quinoa

quinoa chili finalI recently put this recipe together for Snikiddy as their monthly recipe. It goes great with their Eat Your Vegetables chips. I originally found this recipe on then adapted it from there. There are a lot of things that I like about this recipe. One being the simplicity of it with the crockpot. Another is the addition of the quinoa. It is a great source of protein, it adds some texture but it won't bother your family. Your kids will hardly know it is there and yet they will be getting so many benefits from it. Play with the spice level as you wish. We like spice in our house but the version below is not very spicy. If you don't have a slow cooker you could also do this in a dutch oven or on the stove top in a large pot.

Grilled Vidalias with Bacon

Vidalia onions are so sweet and delicious, cooking them over the grill just brings the sugars out even more.  There are so many ways to grill these onions to make them taste good. This is just one simple way to do it. I keep trying different ways every time I cook them. This one is my favorite. I encourage you to experiment, after all they are in season and on sale.


Finnish-Style Cabbage

finnish_cabbageCabbage makes a great side dish when you are trying to cook on a budget because it can be hearty, versatile and cheap. This is a recipe that I got from my grandmother and it is delicious. There is a video for this recipe as well in the Watch and Learn section. This is perfect for a winter evening. It is warm, hearty and feels like a big hug.


Sweet Potato Squash Coconut Casserole

The base for this recipe came from Real Simple magazine.  I have already cooked it 4 times in less then a month.  People can not get enough of it.  There is nothing really healthy about this but it is yummy and perfect for the holidays.  Plus it is fairly cheap and easy.  The pecans are the only real thing that pushes the budget a little, so if you don't want to buy them just leave them out. (PS I have an image but I'm still having problems uploading them. Trust me its good)


Grilled Pork Loin

Grilled spice rubbed pork loinLast Sunday I was visiting my friend in Cleveland. They have the best fresh market there called the West Side Market. You can get everything and anything there, and the prices are right! We wanted to grill something slow so we decided to do a pork loin over indirect heat. The recipe showed what spices I used for it but really you can use anything you want. I have to say mine was slightly spicy but mostly just an enjoyable heat level. It is such an easy pork recipe that is full of flavor.
