Brown Rice Salad

brown rice saladI made this while I was home at my mom's last week and she said she is going to make it all summer long. I thought I would help her out by posting the recipe. This is great for a bbq or picnic because its cheap and you can make a large bowl of it. Sorry there is no photo. I will be sure to take one next time I make it. I like to eat this cold or at room temperature but feel free to serve it warm as well.

Cost: $6, which makes it about $1.50 or less per serving.

Quick tips:
#1 The measurements don't have to be exact as long as it is to your taste, that is why the measurements in the recipe are precise.

#2 If you are not a fan of cilantro you can use basil instead. It will be a different flavor but still a good one.

2 cup uncooked Brown Rice
1/2 cup Orange Juice
Juice from 1 lime
1/2 cup or more of Fresh Cilantro chopped
1 Avocado diced
1 Mango diced
1 can Black Beans drained and rinsed
1/2 cup Olive Oil
Salt and Pepper


Cook brown rice according to package instructions.

In a bowl mix together the orange juice, lime juice and cilantro. Which in the olive oil and then season with salt and pepper to taste. Next through the mango and avocado in a bowl. Once rice is done cooking let it cool, then add to the mixture. Stir well. I recommend making it a little bit ahead of time so that the rice has time to absorb all the yummy flavors.
