Simple Bruschetta

bruschettePeople seem to love my recipe for bruschetta, even when I add too much garlic. It is very simple to make and makes a perfect appetizer or finger food at a party.

Cost: $6...this will make quite a large bowl.

Quick tips: Start with the one clove of garlic and then if you want it a little spicier add more. I have a tendency to add too much at the beginning and then just end up with a stronger bruschetta then most people like.

6 Roma or Vine Tomatoes chopped
1 clove of Garlic minced
2 Tbsp of fresh Basil chopped
2 Tbsp Balsamic Vinegar
2 Tbsp Olive Oil
1 Baguette
Salt and Pepper

Add all of the ingredients in a bowl and season with salt and pepper. Put in the fridge until you are serving it. Preheat broiler on high. Slice the baguette into rounds and drizzle with a little bit of olive oil. Place under the broiler for just a moment, flip them all and place them under the broiler. Be careful not to burn the bread, that is another common error. You can either serve the tomato topping on the bread or serve it in a bowl and let people top their own bread.
