My Favorite Recipes to Use All Those Garden Fresh Tomatoes

cherry tomatoOK, I realize that is a really long blog title, but it describes exactly what I want to present. If you plant tomatoes in your garden, then you know how many tomatoes one plant can give you. Of course, one option is to create a number of sauces that you can then can, but don't you want to enjoy them fresh and off the vine. This is when they are packed full of flavor. That delicious, sweet flavor you never get from a grocery store tomato. Here are just some of the recipes that I like to make with my bowls full of tomatoes.

Simple Bruschettapolenta cakes with bruschetta
This is my bruschetta recipe. It is easy to throw together and doesn't require a lot of ingredients. Perfect for those summer guests that may just stop by to say hi. If you don't have bread, no need to worry. There are so many different things you can do with this tomato topping. Put it on top of crackers, serve with tortilla chips, or place in a wrap with some mozzarella. The list goes on and on. Grab tomatoes and basil from your garden and a few items from your pantry. You are all set.

Pork Chops with BBQ Tomatoes
This is another one of my recipes. The meat doesn't have to be pork chops. You could use chicken or fish as well. The tomatoes will most likely be the star of the show anyway. You are essentially creating a fresh bbq sauce. The tomatoes will break down just a little and absorb the sweet and sour flavors that you have them simmering in. You will get a burst of tomato in your mouth with each bite.

Chicken Caprese
This recipe take your favorite summer salad of tomato, basil and mozzarella and turns it into a dinner entree. Just marinate the chicken breasts, and top them with all the salad toppings. Finish it off with a drizzle of balsamic vinegar. I like to add a little white wine to the pan when I am cooking the chicken to give it an extra depth of flavor.

Who doesn't love a tart with a flaky pie crust, creamy cheese and sweet tomatoes. Another simple recipe that is great for entertaining. Make it for brunch, lunch or just to have on hand. The best part of learning to make one tart is that you can use the same principles to make any tart with any fillings that you want.

Tomato and Peach Salad with Feta
Don't forget about the quick summer salads too. Tomatoes can actually combined well with a number of different fruits. This one uses heirloom tomatoes, peaches, red onion and feta. Tomatoes also make a great addition to watermelon salad.

Baked Tomato and Egg Cup
Of course we can't forget about breakfast. Bake an egg inside of your fresh tomato for a simple treat. You could even make them ahead of time to reheat during the week. It may give you something to look forward to in the morning.
