Pulled Chicken Tacos

pulled chickenIf you often need a quick weeknight meal that your family will actually enjoy, pulled chicken is a great solution. It is something that you can cook a large batch of then just have on hand to use throughout the week with different things. These tacos are just one idea, but you can take the pulled chicken part and apply it to a number of recipes.

 

Cost: $20, it will feed 4-6 people depending on how much your family eats. I know we don't know when to stop eating on Tacos nights in my house.

Quick tips: You can also make the chicken in a slow cooker instead if you prefer. Just put it on low for 2-3 hours and you should be able to easily pull the chicken apart.

Ingredients

3 boneless skinless Chicken Breasts1 Taco seasoning packet
2 Tbs Chili powder
1 tsp Cayanne pepper
1 Onion, sliced
Freshly chopped or Canned tomatoes (like Rotel)
Shredded Cheese
Sour Cream
Chopped Lettuce
Tortillas
Olive Oil
Salt
Pepper

Instructions

Preheat your oven to 350 degrees.

Heat a dutch oven over medium-high heat. Put a little bit of oil in the bottom. Season your chicken breats with salt and pepper. Brown both sides of all the chicken breasts for about 4 minutes on each side. Pull them out of your pot and throw the onions in. Turn the heat down to medium. Let them cook down for 5-10 minutes, until the soften. You will need to stir them occasional. Now add in the taco seasoning, chili powder and cayanne pepper. Let the spices cook for about a minute. Add your chicken back in along with 1/2 cup of water. Cover and place in the oven for about 1 hour up to 90 minutes. The chicken should easliy fall apart when you pull it with a fork. It if doesn't, put it in the oven for a little longer.

Once chicken is done you can let your family build their own tacos with the tomatoes, cheese, sour cream and lettuce. Let your family experiment and have some fun. After all that is what taco night is about!
