Chicken Stuffed Peppers

I am a huge fan of chicken salad. I also like to stuff vegetables to create delicious meals. I thought I would combine both of my loves and create sort of a warm chicken salad, place it inside a pepper and then bake it, there by roasting the pepper at the same time. This is kind of like a chicken salad melt inside a pepper instead of bread. It would be great served with some kind of potatoes whether it is potato salad or roasted potatoes, or another starch like couscous.

Tips to Make Thanksgiving More Affordable, Less Stressful, with Better Foods

I know that everyone and their mother (in this case I mean it literally) has tips and tricks that they share on the world wide web about hosting a successful, affordable and stress free Thanksgiving. These are tips that have been passed down from mother to daughter generation after generation. So why do I feel the need to write another blog article about it? I know there are plenty of people out there like my sister. If she were the one hosting Thanksgiving this year, so would need all the tips and tricks she could get. I'm hoping that while I may have some repeats below that you've seen before, hopefully there will be some new ones you haven't thought of.

Starting Shopping the Week Before Thanksgiving
Even if you are hosting a large group of family and friends, Thanksgiving doesn't have to be expensive. Turkeys generally go on sale the week before Thanksgiving so that is the time to buy them. Not to mention to need to give it around four days in the fridge to thaw. I got my turkey for $.59 a lb. I can feed everyone at my Thanksgiving for about $9. This tip will also mean no last minutes trips to the over crowded grocery store.

Shop Multiple Stores Based on Sales
If you don't look at grocery store circulars at any other time of the year, you should look at them during the weeks leading up to Thanksgiving. Grocery stores will have similar prices on some items, but each store generally picks a few items to price lower then the other stores in the area. If you live in the middle of nowhere, I would skip this tip. No sense driving all over. But if you live in a highly populated area with a lot of grocery stores, stop and pick up the items that are priced lower when you are out and about the week leading out to Thanksgiving. I got yams at one of my local grocery stores for $.39 a lb and the 5lb bags of potatoes were buy one get one free. It cost me only a few dollars total for two of my side dishes.

You know how Thanksgivings in the past have gone. You spend all morning cooking, wave to your guests as the come in and then finally see them when you all sit down for dinner. That is if you aren't running back and forth to the kitchen to get things people need. This year get more of it done before so you can enjoy the people that have come to your home. Some side dishes hold up and reheat really well. You can cook your mashed potatoes, stuffing and sweet potato or squash dish (depending on the recipe) on Sunday then just reheat them while the turkey is resting. They will be warm just about the time you are done carving the turkey. Reheat them in the oven slowly so that you don't dry out the sides and keep some stock on hand in case you need to mix it in. Cranberry sauce can also be made before the big day.

Quick Tips:

- Let the turkey rest for 1/3 of the cook time before carving. i.e. If the turkey cooks for 3 hours let it rest for 1 hour.

- If you are hosting, take care of the Turkey, gravy and drinks. Let your guests bring the rest of the dishes.

- Keep your centerpiece simple. Use seasonal vegetables like pumpkins, pomegranates, and squash. Lay them out with candles and affordable flowers like carnations.

- If you are the only one cooking, don't try to over do it. Stick to the turkey and two or three sides. Or ask each family member which dish they really want at Thanksgiving and just cook those.

- Don't feel the need to constantly open the oven and baste or look at your turkey. This will just let heat out the mashed potsoven and extend the cooking time. If you properly prep the turkey, should shouldn't need to baste it.

- Don't be nervous about lumpy gravy, but if you are you can always keep a jar of store bought gravy as backup. Just remember to put your flour or corn starch into your pot before you add the stock. When you do add the stock, whisk. You will get lumps if you add your thickener once your liquids are in the pot and hot.

- Thaw out your turkey in the fridge enough days in advance. You need about a day for every 4lbs.

- If you know your family likes more white meat then dark, buy a smaller turkey then purchase a turkey breast to cook as well.

- As soon as you are done carving your turkey, stick the carcass in a crock pot with onions, carrots, celery, thyme and a bay leaf, then cover in water and place on low. Let it cook for 6-8 hours and you will have delicious turkey stock.
